A Crispy, Cheesy Way to Turn Fresh Garden Zucchini into a Flavorful Breakfast, Lunch, or Side Dish

If you're looking for a creative way to use up an abundance of garden zucchini, these Savory Zucchini Waffles are a recipe you'll want to keep on repeat. Crispy on the outside and tender on the inside, they're packed with shredded zucchini, cheddar cheese, and savory seasonings for a delicious twist on traditional waffles. They're perfect for breakfast topped with a fried egg, served alongside grilled chicken for dinner, or enjoyed as a snack with your favorite dipping sauce.
As a registered dietitian, I love recipes that make vegetables the star of the plate. Zucchini is naturally low in calories while providing fiber, vitamin C, potassium, and antioxidants that support overall health. Combining it with an egg and cheddar cheese adds protein, while the breadcrumbs help create a crispy texture without the need for deep frying. It's a simple way to enjoy more vegetables while creating a meal that's both satisfying and full of flavor.
One of the best things about these savory waffles is how versatile they are. Serve them with Greek yogurt ranch, sour cream, marinara sauce, or even avocado for an easy meal or appetizer. They also freeze well, making them a great option for meal prep or busy weeknights. Whether you're harvesting zucchini from your own garden or trying to use up a neighbor's oversized gift, these waffles are a fun and unexpected way to make the most of summer's favorite vegetable.
Yield: 1 waffle
Total time: 15 minutes

Ingredients:
1 c grated zucchini
1 egg
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp paprika
1/3 c cheddar cheese, shredded (I use sharp cheddar)
1/4 c plain breadcrumbs
1/2 tsp salt
Directions:
Heat waffle iron.
Mix all ingredients in a bowl until well-combined and batter is moist.

Spray waffle iron well with non-stick cooking spray.
Add batter to the waffle iron and cook for about 5 minutes or until well-browned.

Serve immediately. I love to serve this with Primal Kitchen's Creamy Sriracha dipping sauce! Enjoy!
