10-Minute California Roll-in-a-Bowl

All the Flavor of a California Roll, No Rolling Required
Jalapeno Popper Chicken Bake

The California Roll in a Bowl is the perfect lunch for anyone who loves sushi but doesn’t want the fuss of rolling or complicated prep. With fresh ingredients like cucumber, avocado, crab (or imitation crab), and quick-cook rice, this bowl delivers all the classic flavors of a California roll with almost no cooking required.


Prep is simple and stress-free: just chop, assemble, and drizzle with your favorite sauces. It’s a light, fresh, and customizable meal that’s ready in minutes, and perfect for busy weekdays, quick meal prep, or a satisfying lunch that doesn’t weigh you down.

Yield: 2 bowls

Total time: 10 minutes

Ingredients:

  • 1 8-oz. package Imitation crab chunks

  • 1/2 English cucumber, chopped

  • 1 pouch 90-minute jasmine rice (any other rice works well too!)

  • 1 ripe avocado, cut into chunks

  • 1 green onion, chopped

  • 2 tsp toasted sesame seeds

  • 3-4 Sushi Nori (seaweed) sheets



    Spicy Mayo

  • 1/4 c mayo

  • 3-4 Tbsp Sriracha

  • 1 tsp lemon juice


Directions:

  1. Cook the minute rice according to package directions.

  2. While the rice is cooking, mix all the ingredients of the spicy mayo together until combined.

  3. Transfer cooked rice to bowls (evenly divide between two).

  4. Chop the imitation crab chunks into smaller pieces. Divide the crab between the two bowls.

  5. Tear 3-4 nori sheets into small pieces and add to bowls.

  1. Top the bowls with cucumbers, avocado chunks, and green onion. Drizzle the spicy mayo and sprinkle sesame seeds. Enjoy! Can be prepped 3-4 days ahead of time.
