Total time: 20 minutes

Ingredients:
6 hard-boiled eggs (you can buy these pre-made at the store to save time!)
1/2 c low-fat cottage cheese
1 Tbsp lemon juice
2 tsp Dijon mustard
Salt & pepper
2 Tbsp fresh dill
1 Tbsp chives
Directions:
Hard-boil 6 eggs. Let cool. Then peel. Skip this step if you purchased pre-made peeled hard-boiled eggs from the store.
Peel and separate the yolks from the whites. Add yolks to a large bowl.

Roughly chop egg whites.
Add mustard, lemon juice, cottage cheese, salt and pepper, dill, and chives.

Fold in diced egg whites until combined. Chill and serve on whole-grain bread or use as a dip for fresh veggies.
Optional: cut into small sandwich squares and stack.
