Ingredients:

  • 6 hard-boiled eggs (you can buy these pre-made at the store to save time!)

  • 1/2 c low-fat cottage cheese

  • 1 Tbsp lemon juice

  • 2 tsp Dijon mustard

  • Salt & pepper

  • 2 Tbsp fresh dill

  • 1 Tbsp chives




Directions:

  1. Hard-boil 6 eggs. Let cool. Then peel. Skip this step if you purchased pre-made peeled hard-boiled eggs from the store.

  2. Peel and separate the yolks from the whites. Add yolks to a large bowl.

  3. Roughly chop egg whites.

  4. Add mustard, lemon juice, cottage cheese, salt and pepper, dill, and chives.

  5. Fold in diced egg whites until combined. Chill and serve on whole-grain bread or use as a dip for fresh veggies.

  6. Optional: cut into small sandwich squares and stack.
