Homemade strawberry fruit leathers are one of the easiest ways to turn fresh fruit into a naturally sweet, chewy snack you can enjoy all week long. Made with just strawberries (and a touch of lemon), they capture the pure flavor of ripe fruit without the added sugars, preservatives, or artificial ingredients often found in store-bought versions. It’s a simple, satisfying way to let seasonal fruit shine on its own.

Making fruit leathers at home also gives you full control over what goes into your food. Fresh strawberries are naturally sweet, rich in vitamin C, and packed with antioxidants, so you don’t need much else to create something flavorful and nourishing. By using whole fruit, you keep the fiber intact, which helps with fullness and gives the finished leather its signature chewy texture.

Beyond the nutrition, there’s something really satisfying about the process itself. Blending fresh fruit, spreading it thin, and slowly drying it concentrates the flavor into something portable and snackable. Total time: 15 minutes

Ingredients:

  • 16 oz ripe strawberries, hulled and diced

  • 3 Tbsp sugar, divided

  • 2 tsp vanilla

  • 1/2 tsp fresh lemon zest

  • 1 package (8oz) low-fat cream cheese, softened

  • 1/2 c whole-milk plain Greek yogurt

  • Vanilla wafers of graham crackers, for serving


Directions:

  1. In a small bowl, mix strawberries, 1 Tbsp sugar, vanilla, and lemon zest. Set aside.

  2. In another medium-sized mixing bowl, place the remaining 2 Tbsp sugar, softened cream cheese, and Greek yogurt. Beat on medium speed until smooth, about 2 minutes.

  3. Spread the cream cheese mixture on a serving plate or in a bowl. Spoon strawberry mixture on top of the cream cheese mixture.

  4. Serve dip with vanilla wafers, cookies, or graham crackers. Enjoy!
