Upgrade your lunch with this delicious wrap!

This sun-dried tomato taco wrap puts a fresh spin on classic taco flavors by pairing seasoned ground turkey with the rich, savory notes of a sun-dried tomato tortilla. The wrap adds depth and a hint of sweetness that balances the bold, spiced taco meat, making this lunch both satisfying and unexpectedly elevated.
Finished with a drizzle of creamy chipotle ranch, every bite delivers a smoky kick that ties everything together. It’s an easy, handheld lunch that feels indulgent yet balanced, and perfect for when you want taco flavor without committing to a full sit-down meal.
Yield: 4 servings
Total time: 20 minutes

Ingredients:
1 lb ground turkey (or beef)
1 Tbsp olive oil
2 tsp cumin
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp chili powder
salt and pepper
1 c diced onion
1 c diced tomato
1 c chopped lettuce
1 c shredded cheddar cheese or Mexican-style cheese blend
4 sun-dried tomato wraps (I used Mission Tortillas)
Chipotle-ranch salad dressing or taco sauce (I used Taco Bell's chipotle ranch sauce!)
Directions:
Add olive oil to a skillet. Over medium heat, cook the ground turkey until browned, about 8-10 minutes. Season with cumin, garlic powder, onion powder, chili powder, and salt and pepper. Remove from heat. Let cool.

Divide meat evenly over 4 tortillas.

Top all tortillas with tomatoes, lettuce, cheese, onion, and pickles. Drizzle chipotle ranch taco seasoning over the top.

Tuck in the sides of the tortilla and roll! I recommend heating the tortilla in the microwave for about 10 seconds first, it will roll easier. Cut in half if desired. Can make 1 day ahead. Enjoy!
