Sun-Dried Tomato Taco Wrap

This sun-dried tomato taco wrap puts a fresh spin on classic taco flavors by pairing seasoned ground turkey with the rich, savory notes of a sun-dried tomato tortilla. The wrap adds depth and a hint of sweetness that balances the bold, spiced taco meat, making this lunch both satisfying and unexpectedly elevated.


Finished with a drizzle of creamy chipotle ranch, every bite delivers a smoky kick that ties everything together. It’s an easy, handheld lunch that feels indulgent yet balanced, and perfect for when you want taco flavor without committing to a full sit-down meal.

Total time: 20 minutes

Ingredients:

  • 1 lb ground turkey (or beef)

  • 1 Tbsp olive oil

  • 2 tsp cumin

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili powder

  • salt and pepper

  • 1 c diced onion

  • 1 c diced tomato

  • 1 c chopped lettuce

  • 1 c shredded cheddar cheese or Mexican-style cheese blend

  • 4 sun-dried tomato wraps (I used Mission Tortillas)

  • Chipotle-ranch salad dressing or taco sauce (I used Taco Bell's chipotle ranch sauce!)


Directions:

  1. Add olive oil to a skillet. Over medium heat, cook the ground turkey until browned, about 8-10 minutes. Season with cumin, garlic powder, onion powder, chili powder, and salt and pepper. Remove from heat. Let cool.


  1. Divide meat evenly over 4 tortillas.

  1. Top all tortillas with tomatoes, lettuce, cheese, onion, and pickles. Drizzle chipotle ranch taco seasoning over the top.


  2. Tuck in the sides of the tortilla and roll! I recommend heating the tortilla in the microwave for about 10 seconds first, it will roll easier. Cut in half if desired. Can make 1 day ahead. Enjoy!
