These Farmers Market Breakfast Tacos are everything I love about summer mornings wrapped into one simple, nourishing meal. Packed with fresh vegetables, creamy avocado, vibrant herbs, and perfectly cooked eggs, they showcase the colorful ingredients you’re most likely to find at your local farmers market. Whether you're making them for a leisurely weekend brunch or a quick weekday breakfast, these tacos are fresh, satisfying, and full of flavor.
As a registered dietitian, I’m always looking for ways to build balanced meals with wholesome ingredients. These breakfast tacos combine protein-rich eggs, heart-healthy fats from avocado, and plenty of fresh produce to create a meal that is both nutritious and delicious. The quick-pickled red onions add a bright, tangy bite that elevates every ingredient and makes these tacos feel extra special with very little effort.
One of the best things about this recipe is how customizable it is. Use poached eggs for an elegant brunch-worthy presentation or scrambled eggs for a faster, family-friendly option. You can swap in whatever greens, herbs, or seasonal vegetables you have on hand, making these tacos a versatile way to enjoy the freshest flavors of the season. Ingredients:
4 corn or flour tortillas (small taco size)
4 eggs (poached or scrambled)
1 c vinegar plus 2 tsp, divided
1 small red onion, thinly sliced
2 cloves garlic
2 Tbsp sugar
2 tsp sea salt, divided
2 tsp olive oil
Hot sauce
1 avocado, sliced
1 ripe tomato, sliced
Microgreens
Arugula
Dill
Cilantro
Salt and pepper to taste
Directions:
First, pickle the red onions. Add the thinly sliced red onions and 2 whole cloves garlic to a mason jar or heat-safe container. In a saucepan, heat the vinegar, water, sugar, and 1 tsp salt over medium-high heat. Stir until sugar dissolves. Remove from heat and let cool slightly. Pour the vinegar mixture over the onions and garlic (be careful, it will be hot!), making sure they are fully submerged. Let sit for at least 30 minutes while you prepare the remaining ingredients. The longer they sit, the more flavorful they become! Refrigerate to store.

Next, poach the eggs. Bring a large saucepan of water to a boil, then reduce to simmer and add 2 tsp vinegar and 1 tsp salt. Crack each egg into a small bowl. Create a gentle whirlpool in the water with a spoon, then carefully slide the egg into the center. Cook for 3 to 4 minutes for a runny yolk or 4 to 5 minutes for a firmer yolk. Remove with a slotted spoon and place on a paper towel-lined plate. Prefer scrambled eggs? Feel free to use those instead!
Now, assemble the tacos. Lightly brush the tortillas with olive oil and warm them in a large skillet over medium heat for 1 to 2 minutes per side, until soft and lightly toasted and warm. Layer each tortilla with mashed avocado, a poached egg, tomato slices, pickled red onions, microgreens, arugula, fresh dill, and cilantro.

Finish with your favorite hot sauce and serve immediately. Enjoy!
