Ingredients:

  • 1 fresh French baguette, sliced into ½- to ¾-inch rounds

  • 4-5 ripe farmers market tomatoes, diced

  • 1 Tbsp balsamic vinegar

  • 2 cloves farmer's market garlic, minced

  • 4 oz goat cheese crumbles

  • 1 bunch farmer's market purple basil, chopped (sweet basil works beautifully as well)

  • Salt and black pepper, to taste



Directions:

  1. First, toast the crostini. Preheat your oven to 375°F. Arrange the baguette slices in a single layer on a baking sheet and bake for 8-10 minutes, flipping halfway through, until lightly golden and crisp. Watch them closely so they do not burn! Alternatively, toast them in a toaster oven until crunchy around the edges. Set aside.

  2. Next, prepare the tomato topping. While the bread is toasting, add the diced tomatoes to a medium mixing bowl. Stir in the balsamic vinegar, minced garlic, and a pinch of salt and pepper. Let the mixture rest for 10-15 minutes to allow the tomatoes to release their juices and absorb the flavors.

  3. Finally, assemble the bruschetta. Just before serving, spoon the tomato mixture onto each toasted crostini. Top with crumbled goat cheese and a generous sprinkle of chopped purple basil.
