Fudgy High-Fiber Chickpea Blondies

A simple, wholesome twist on the classic blondie

If you’ve never thought of chickpeas as a dessert ingredient, these blondies might change your mind! Chickpeas blend surprisingly well into baked goods, adding a naturally creamy texture without giving the them a strong "bean" flavor. The result is a soft, fudgy treat that brings some extra nutrition to the classic dessert.
As a registered dietitian, I love using chickpeas because they’re an easy way to add fiber and plant-based protein to a recipe. Fiber can help support digestive health and contributes to feelings of fullness and satisfaction, while protein helps make these blondies a little more satisfying than your typical sweet treat. Chickpeas also provide important nutrients like iron, folate, magnesium, and potassium.
And perhaps my favorite part? You don’t need to think of these as a “healthy dessert” that’s supposed to replace the "real thing". They’re simply a delicious way to incorporate more nutrient-dense ingredients into something you already enjoy. Pair the chickpeas with chocolate chips and a few simple baking ingredients, and you get a fudgy, satisfying blondie that’s perfect for an afternoon snack, dessert, or whenever you’re in the mood for something sweet.
Yield: 10-12 servings
Total time: 40 minutes
Ingredients:
1 15-oz can chickpeas
1/3 c AP flour
1/2 c sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tsp vanilla extract
1 medium mashed banana
3 Tbsp oil
2/3 c dark chocolate chips
Directions:
Preheat oven to 350 degrees F. Spray an 8x8 pan with cooking spray.
Drain and rinse the chickpeas thoroughly, then gently pat them dry with a paper towel.
Add all ingredients, aside from chocolate chips, to the food processor. Process until the mixture is smooth.

Add in chocolate chips and mix until just combined.

Pour batter into prepared pan.

Bake for 30 minutes. Remove from the oven and let cool. Enjoy!
