A speedy, no-stress recipe that's meal prep-friendly!

Canned salmon is one of those pantry staples that’s always good to have on hand. With its long shelf life, it’s perfect for those nights when you need a quick, fuss-free dinner and don’t want to worry about anything going bad in the fridge.

Not only is salmon a delicious and versatile ingredient, but it’s also packed with nutrition—rich in healthy fats, high-quality protein, and essential vitamins and minerals. And when you pair it with rolled oats, you get a boost of fiber and even more protein to help keep you full and satisfied. It's a winning combo for a wholesome, feel-good meal!

Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes

Yield: 4 servings

Ingredients:

  • 1 can of salmon, drained (1-14 oz. can)

  • 1/2 c old fashioned rolled oats

  • 1/2 small onion, diced

  • 1 egg, beaten

  • 1 tsp lemon juice

  • 1 Tbsp fresh parsley, chopped

  • 1 tsp Dijon mustard

  • 3 tsp Sriracha

  • 1 clove garlic, minced

  • 1/2 tsp chili powder

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 Tbsp olive oil

Directions:

1. Mix the drained canned salmon, oats, onion, egg, lemon juice, parsley, mustard, Sriracha, garlic, chili powder, paprika, salt, and pepper until combined. Divide mixture into four equal balls, and shape into salmon patties.

2. Heat olive oil in a large skillet over medium heat. Cook salmon patties until browned, 6-8 minutes on each side. Make sure the one side is browned before flipping, or burgers will fall apart easily.

Top with your favorite fixings, such as fresh tomato, cucumber slices, ketchup, avocado, cilantro, lettuce, sriracha mayo (see recipe notes), or red onion, if desired. Serve immediately on a whole grain or brioche bun.

Recipe Notes:

Add an extra teaspoon of Sriracha if you prefer more spice!

Sriracha mayo recipe:

Mix 4 Tbsp mayonnaise with 2 Tbsp sriracha sauce. Add 1 tsp of lemon juice and 1 tsp honey. Mix well and spread on your burger!

Enjoy!
