Make lunchtime more fun with this DIY Taco Bar lunch box! This build-your-own lunch lets kids mix and match their favorite taco fillings, creating a meal that's both fun and balanced. Packed with protein, fiber, and color, it's a great way to encourage variety and give your child a little independence in how they eat.


Layer in small portions of seasoned protein, shredded cheese, chopped veggies, and soft tortillas or chips, and don’t forget a side of salsa or guacamole for dipping! This lunchbox is totally customizable, easy to prep ahead, and guaranteed to come home empty.


Prep time: 10 minutes

Ingredients:

  • 1-2 whole grain flour tortilla(s), "street taco" size (tortilla chips work too!)

  • 1-2 oz. precooked seasoned chicken strips for each taco

  • 1-2 Tbsp shredded cheddar cheese or other cheese blend

  • 1/4 c premade guacamole (individual serving cups work best and stay fresh!)

  • 1/4 salsa

  • 2 Tbsp plain Greek yogurt

  • Bento-style lunch box (with multiple compartments)


Directions:

  1. Fold 1-2oz. of chicken inside of a soft tortilla. Sprinkle with cheese. Pack in the large compartment of the lunch box.

  2. Pack guacamole into a smaller compartment of lunchbox or in a small container.

  3. Pack salsa into a smaller compartment of lunchbox or small container.

  4. Pack yogurt into a smaller compartment of lunchbox or small container.

  5. Add additional "taco bar" toppings in small containers as desired or as space allows in the lunch box (diced tomatoes, lettuce, diced onion, black or pinto beans, green onions, etc.)
