This kiwi coconut yogurt parfait is a fresh, vibrant take on a layered dessert that feels both light and satisfying. Creamy coconut-flavored Greek yogurt is paired with juicy kiwi, bright lime zest, and fresh mint for a combination that’s cooling, tangy, and naturally sweet. Every layer brings a mix of texture and flavor, making it just as beautiful to look at as it is to eat.
Nutritionally, this parfait is built for balance. Kiwi provides vitamin C, fiber, and antioxidants that support digestion and immune health, while the Greek yogurt adds protein to help keep you full and satisfied. I use whole milk Greek yogurt because it adds a rich, creamy texture while providing healthy fats, protein, and probiotics that make the parfait more satisfying and nutritious.
The chia seeds contribute additional fiber and healthy fats, giving the parfait more staying power so it feels like a complete snack or dessert rather than just something sweet.
What really makes this recipe stand out is the contrast in every bite. You get creamy yogurt, smooth kiwi puree, fresh chopped fruit, and a pop of crunch from pomegranate seeds and dark chocolate. Total time: 10 minutes

Ingredients:
2 c no sugar added coconut-flavored greek yogurt (I used whole milk Greek yogurt)
1 Tbsp honey
4 large kiwis, peeled and chopped
1/2 lime, zested
4 mint leaves chopped
2 Tbsp chia seeds
2 Tbsp dark chocolate chips or cacao nibs, chopped or shaved
2 Tbsp pomegranate seeds
1 Tbsp unsweetened coconut flakes
Directions:
In a small bowl, stir together the chopped kiwi and honey. Set aside half of the mixture for layering later.

Transfer the remaining kiwi mixture to a blender and blend until smooth.
In a separate bowl, combine the kiwi puree with the yogurt and lime zest, stirring until creamy and fully incorporated.

Layer the parfait by spooning the yogurt mixture into a glass jar or cup, followed by the reserved kiwi mixture, a sprinkle of chia seeds, and pomegranate seeds. Repeat the layers until all ingredients are used.
Finish with extra pomegranate seeds, chocolate shavings, fresh mint, and coconut flakes. Serve immediately and enjoy!
