A Spooky, Healthy, and Fun Halloween Lunch Kids Will Love!
Jalapeno Popper Chicken Bake

Get your little monsters excited for mealtime with this fun and spooky Franken-Wrap! Made with a vibrant spinach tortilla for Frankenstein’s monster green “skin,” this kid-friendly wrap is stuffed with nutritious, tasty fillings and decorated with playful features to bring the famous creature to life. Complete with tortilla chip “hair,” cheese “bolts,” and a goofy veggie face, it’s the perfect way to sneak in some nutritious ingredients while keeping things festive and fun—ideal for Halloween lunches, parties, or a creative afternoon snack.

Total time: 15 minutes

Ingredients:


  • 2oz. cream cheese, softened

  • 1/4 tsp garlic powder

  • 1/4 tsp chives

  • 2 oz. shredded cheddar cheese

  • 3-4 slices deli turkey or other meat of choice

  • Spinach tortilla wraps

  • 2 slices Turkey pepperoni

  • A few black olives, slices

  • A few cucumber slices

  • 1/4 lettuce or spinach, chopped

  • 1 red bell pepper, cut into a strip (for the mouth)

  • A handful of mini cheesy or blue corn tortilla chips (for the hair)

  • 2 Cheese cubes or mini pickles (for the bolts)

  • Toothpicks


Directions:

  1. Mix the cream cheese. In a small bowl, add garlic powder and chives to the 2oz. of softened cream cheese and mix until well combined.


  1. Spread the cream cheese evenly over the center of the tortilla.

  1. Add a few slices of turkey.


  2. Sprinkle the cheese and lettuce over the meat.

  3. Roll up the tortilla and press down in the center to flatten so that you can add the toppings to make the face.

  4. Now it’s time to bring your Franken Wrap to life! Start by placing two cucumber slices near the top for eyes, then layer a slice of pepperoni over each one. Add a sliced olive on top for the pupils. Cut a thin strip of red pepper to create a mouth and place it below the eyes. For Frankenstein’s signature hair, arrange three mini chocolate chips (points facing down) along the top edge. Finally, thread a cheese cube onto a toothpick and stick one on each side of the tortilla to make his “bolts.”
