Yield: 1 quesadilla

Total time: 10 minutes

Ingredients:

  • 2 flour quesadillas, taco size

  • Shredded cheddar cheese or another flavored shredded cheese blend

  • Sharp knife for cutting shapes in the tortillas or Halloween cookie cutters

  • Optional fillings: peppers, onions, beans, chicken, etc.

Directions:

  1. Lightly coat a non-stick pan with cooking spray and warm it over medium heat on the stovetop.

  2. Cut one of the tortillas into a fun Halloween shape. I made mine into a jack-o’-lantern face, but you can also use cookie cutters to create ghosts, bats, or other spooky designs!

  3. Place the plain tortilla in the heated pan and sprinkle it with cheese and your desired toppings. Then, gently place the cut-out tortilla on top to form your festive quesadilla.

  4. Cook the quesadilla for 3–4 minutes on each side, flipping carefully once the bottom is golden and the cheese begins to melt.

  5. When both sides are cooked to your liking and cheese is melty, remove from heat. Serve with salsa or sour cream. Enjoy!
