Spooky, Savory, and Totally Delicious Halloween Dinner in a Pepper!

Bring some festive fun to your dinner table with these Jack-O-Lantern Stuffed Peppers! Hollowed-out orange bell peppers transform into cheerful, spooky pumpkins filled with a hearty mix of rice, veggies, and your choice of protein. Not only are they visually delightful for kids, but they’re also packed with flavor and nutrition, making them a perfect Halloween meal that’s both playful and satisfying. Quick to prepare and fun to serve, these stuffed peppers are sure to become a seasonal favorite for the whole family.

Total time: 45 minutes
Ingredients:
4 orange bell peppers
1 lb ground turkey
1 packet of low sodium taco seasoning
1 small roma tomato, chopped
shredded cheddar cheese
Directions:
Preheat your oven to 375°F.
Trim the bottoms of the bell peppers so they stand upright.
Spray a baking dish with cooking spray or line a baking sheet with parchment paper.
Carefully carve jack-o’-lantern faces into the peppers using a small, sharp knife.
In a skillet over medium-high heat, brown the turkey until fully cooked.
Add taco seasoning and cook according to the package instructions.
Stir in chopped tomatoes and cook for an additional minute.
Remove from heat and spoon the turkey mixture into each carved pepper. Top with shredded cheddar cheese.
Place the peppers in the prepared baking dish and bake for 12–15 minutes, or until the cheese is melted and bubbly.
