Jalapeno Popper Chicken Bake

If you’re staring down a fridge full of Thanksgiving leftovers, it’s time to give that turkey and stuffing a second life! Instead of reheating the same plate for the third day in a row, turn those leftovers into something completely different with these crispy Turkey & Stuffing Waffles. They’re an easy, creative way to transform two Thanksgiving favorites into a fun meal the whole family can enjoy.

These savory waffles are made with just a handful of ingredients and come together quickly. The stuffing creates a crispy, golden exterior while the turkey adds a boost of protein, and Parmesan brings even more savory flavor. Plus, using your leftovers means less food goes to waste and you can enjoy familiar holiday flavors in a whole new way.

Serve these waffles on their own, or get creative with your toppings! Add a fried egg, a drizzle of gravy, or even a dollop of cranberry sauce for a fun twist. Whether you're looking for an easy day-after-Thanksgiving breakfast, lunch, or dinner, these waffles are proof that leftovers don't have to be boring!

Yield: 2 waffles

Total time: 15 minutes

Ingredients:

  • 2 c stuffing

  • 2 eggs

  • 1/2 c cooked turkey meat, diced

  • 2 Tbsp Parmesan cheese, grated

Directions:

  1. In a medium bowl, whisk the eggs.

  2. Add in remaining ingredients and mix until combined. Stuffing should be moist.

  3. Prepare a waffle iron by spraying with non-stick spray. Preheat waffle iron.

  4. Carefully add half of the stuffing mixture in the waffle iron and gently press down. Cook until waffle is golden brown and crispy, about 7-8 minutes.

  5. Repeat with remaining stuffing. Serve with cranberry sauce, if desired. Enjoy!
