S'mores Stuffed Dates (A No-Bake, High-Fiber Treat!)

Sweet, gooey, and irresistibly nostalgic-campfire flavor packed into every bite

If you love the cozy, nostalgic flavors of s’mores but want something a little simpler and a little less messy, these s’mores stuffed dates are about to become your new go-to treat! My stuffed date obsession continues with this summer snack ;)
Soft, caramel-like dates are filled with gooey marshmallow fluff, dipped in chocolate, then finished with a touch of graham cracker crunch for that classic campfire feel (but no fire required!)
Dates are very nutrient-dense! They're high in fiber and potassium, they're great for digestion, and contain antioxidants. Add little boost of nutrition to your treats with this recipe!
These s'mores stuffed dates come together in only minutes (we love a no-bake recipe!) and strike the perfect balance between indulgent and naturally sweet. Whether you’re making a quick dessert, a fun party bite, or just craving something chocolatey, these little bites deliver all the flavor of a traditional s’more in a poppable form!
Ingredients:
8 medjool dates, pitted
Marshmallow fluff (or make your own with this recipe!)
1/2 c dark chocolate chips
1-2 graham crackers
Directions:
Line a plate or a small baking sheet with parchment paper.
Add the graham crackers to a Ziploc bag and seal. Crush on a hard surface until they form fine crumbs.
Open up each date. Using a spoon, "stuff" the date with marshmallow fluff. Repeat with all dates.

In a small bowl, melt 1/2 c dark chocolate chips in the microwave.
Using a spoon, dip the stuffed date into the melted chocolate and roll gently until completely coated. Place on prepared plate.

Sprinkle the graham cracker on top of the chocolate-covered dates while it is still melty. Let set in fridge for 10-15 minutes before eating. Enjoy!
Store in the fridge for up to 1 week.
