Spooky Sheet Pan Dinner

A simple, one-pan dinner in 30 minutes!

Looking for an easy dinner that doesn't require a sink full of dishes? This spooky sheet pan dinner is a simple way to get a satisfying meal on the table with minimal prep and cleanup. With "Halloween" colorful roasted vegetables and savory sausage, everything cooks together on one pan for an easy option on busy weeknights.
Sweet potatoes, carrots, broccoli, cauliflower, and purple potatoes bring a variety of colors, flavors, and nutrients to this meal. Sweet potatoes provide beta-carotene, which the body converts to vitamin A to support vision and immune function. Potatoes also provide carbohydrates for energy, along with nutrients like potassium and vitamin C. Pairing the vegetables with sausage and/or beans adds protein and fat to help make the meal more satisfying.
The best part about a sheet pan dinner is how easy it is to customize! Swap in your family's favorite vegetables, use chicken sausage or another protein, or add black beans when serving everything in a bowl. You can even use pre-cut vegetables to save time on busy nights. It's a flexible, flavorful meal that makes getting dinner on the table a little easier!
Yield: 4 servings
Total time: 30 minutes
Ingredients:
Pre-cooked flavored chicken sausage, cut into pieces (my favorite is Amylu!)
Purple potatoes, cubed (I use baby potatoes so I only have to cut in half)
1 medium sweet potato, cubed
2-3 large carrots, sliced into "coins"
2 cups broccoli or purple/orange/white cauliflower, cut into bite-sized pieces
1-2 Tbsp olive oil
1 can black beans, rinsed and drained
Salt and pepper, to taste
Sauce for serving, optional (see sauce recipe below)
Directions:
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
Arrange all veggies on prepared baking sheet.
Drizzle veggies with olive oil.
Roasted in preheated oven for 20-25 minutes.
While it's in the oven, prepare the sauce, if using (see below for directions).
Remove from oven. Using a spatula, divide mixture into bowls. Top with black beans and sauce, if using. Enjoy!

Creamy Honey mustard sauce (optional)
Prep time: 5 minutes
Yield: About ½ cup
Ingredients
¼ cup plain Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon honey
1-2 teaspoons fresh lemon juice
1-2 teaspoons water, as needed to thin
Pinch of salt and black pepper, to taste
Instructions
In a small bowl, whisk together the Greek yogurt, Dijon mustard, honey, and lemon juice until smooth.
Add water, 1 teaspoon at a time, until the sauce reaches your desired consistency.
Season with salt and black pepper to taste.
Drizzle over roasted vegetables and sausage, or serve on the side as a dipping sauce.
Recipe Notes
This creamy, tangy sauce pairs especially well with roasted potatoes, veggies, and chicken sausage. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
