This recipe is all about meeting eaters where they are. By pairing a naturally mild veggie with a sweet-heat sauce and a satisfying texture, cauliflower transforms into a side dish that actually gets requested again. Total time: 35 minutes

Ingredients:
1 head cauliflower
3 Tbsp maple syrup
3 Tbsp Sriracha or other hot sauce
1 Tbsp soy sauce
1 Tbsp olive oil
Salt and pepper to taste
Directions:
Preheat oven to 400 degrees F.
Wash cauliflower head and chop into bite-size pieces.

Combine maple syrup, hot sauce, soy sauce, and olive oil in a large bowl. Mix until combined.

Add the cauliflower to the bowl and mix until well-coated.

5. Spread the cauliflower out in a single layer on a baking sheet, making sure the pieces aren’t crowded. Giving them space allows the heat to circulate so they roast up golden and perfectly crisp.

Roast for 25-30 minutes or until cauliflower is browned and tender. Season with salt and pepper. Enjoy!
