A Simple Sweet Glaze That Makes Carrots Hard to Resist

Carrots are a classic side, but sometimes even familiar veggies need a little upgrade to get everyone excited at the table. These roasted carrots with a maple glaze are sweet, savory, and perfectly caramelized, turning a simple vegetable into a crowd-pleasing dish. The natural sweetness of the carrots pairs beautifully with the warm, rich maple, making every bite comforting.
This recipe is perfect for picky eaters because it keeps flavors simple, textures approachable, and presentation appealing. Roasting brings out the natural sugars in the carrots, while the glaze adds just enough flavor to make them feel special without being overwhelming. Whether it’s a weeknight side or a holiday addition, these carrots are a delicious way to make vegetables a highlight of the meal.
Yield: 2 bowls
Total time: 30 minutes

Ingredients:
1 lb. carrots (about 5-6 medium)
2 Tbsp olive oil
1 tsp garlic powder
Salt and Pepper
4 Tbsp maple syrup
Directions:
Preheat oven to 400 degrees F. Line a baking pan with parchment paper.
Wash and dry carrots. No need to peel them!
Cut carrots in half lengthwise. If some carrots are very large, you can cut them in quarters lengthwise so that they are all similar in size and will cook evenly. Place on prepared baking sheet.

Drizzle olive oil over carrots and sprinkle with garlic powder and salt and pepper.

Roast carrots in oven for 20 minutes.
Remove and drizzle carrots with maple syrup. Toss carrots to coat evenly.

Return to oven for 5 more minutes to carmelize (or until carrots are soft). Enjoy!
