All the Buffalo Flavor You Love In a Veggie Everyone Will Try

If you love bold, saucy flavors but want an easier way to get more veggies on the table, these cauliflower buffalo wings are the answer. They deliver everything people crave about classic buffalo wings: the crisp edges and tangy heat but without deep frying or complicated prep. Even self-proclaimed veggie skeptics tend to reach for seconds!
This recipe works especially well for picky eaters because the flavor does the heavy lifting. The familiar buffalo sauce masks any bitterness, while the crispy texture and rich flavor makes cauliflower feel satisfying. Serve them as an appetizer, game-day snack, or simple dinner side, and don’t be surprised if they disappear faster than expected.
Yield: 2 servings
Total time: 30 minutes

Ingredients:
1 head cauliflower, cut into bite-size pieces
1 1/4 c all-purpose flour
1 c milk
1 tsp garlic powder
1/2 tsp paprika
Salt and Pepper
3/4 c buffalo sauce (I love Buffalo Wild Wing's Spicy Garlic sauce!)
Directions:
Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.
Next, make the batter. In a large bowl, combine the flour, milk, garlic powder, and paprika. Mix the batter until smooth.

Dredge each piece of cauliflower in batter. Shake off excess. Place on prepared baking sheet.

Bake the cauliflower until golden and tender, about 20 minutes.
When done, remove from oven. Add 3/4c to 1c wing sauce to a large bowl. Transfer cauliflower to bowl and toss in buffalo sauce until coated. Enjoy!
