3-Ingredient Pumpkin Spice Cookies

Your new favorite way to use a can of pumpkin!

If you’re looking for the easiest pumpkin cookie recipe ever, this might be it. All you need is a can of pumpkin, a box of spice cake mix, and some chocolate chips. That’s it! No mixer, no complicated ingredients, and no measuring out a dozen different spices.
If you’ve never used a boxed cake mix to make cookies before, this is your sign to try it! Spice cake mix is essentially a shortcut baking mix that already has the flour, sugar, leavening, and warm spices you’d typically measure out yourself. It makes it incredibly easy to turn a few simple ingredients into a batch of cookies without starting completely from scratch.

These cookies come together in minutes and bake up soft, chewy, and full of cozy fall flavor. The spice cake mix brings all those warm cinnamon-and-spice flavors without needing to pull out your entire spice cabinet, while the chocolate chips add just the right amount of sweetness.
I love a good from-scratch recipe, but sometimes you just want cookies without making it a whole thing. This is one of those recipes. Keep the ingredients on hand and you can have a batch of pumpkin cookies ready whenever the craving hits!
