Yield: 12 donuts
Total time: 40 minutes
Ingredients:
2 medium zucchini, grated and excess water squeezed out (about 1.5 cups)
1/3 c olive oil
1/2 c honey
2 eggs
2 tsp vanilla
1 1/2 c flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
Vanilla Glaze:
1 1/2 c powdered sugar (you can add 1/4 c more if you like your glaze thicker)
2 Tbsp milk
1 tsp vanilla
Directions:
Preheat oven to 350 degrees F. Grease donut pan(s) with olive oil spray.
In a medium bowl, mix together oil, honey, eggs, and vanilla.
Fold in the zucchini, then add the flour, baking powder, cinnamon, and salt and mix until combined. Be careful not to over-mix!

Divide the batter between the donuts in the pan, filling about 2/3 full. Bake for 11-12 minutes.

While baking, make the glaze. Combine all glaze ingredients in a mixing bowl and whisk until smooth.
Remove from oven and let cool completely before removing from pan. Top donuts with glaze. Enjoy!
