These Farmer’s Market Fresh Watermelon Feta Bites combine juicy watermelon, crisp cucumber, creamy feta, and fresh mint for a refreshing appetizer that celebrates the flavors of the season. Finished with a drizzle of balsamic glaze, each bite delivers the perfect balance of sweet, salty, and fresh flavors, making them an ideal addition to any summer gathering.

Ingredients:
1/4 fresh whole watermelon (about 1 lb of chunks total)
2 blocks Feta cheese (8 oz each)
2 cucumbers
Balsamic glaze
5-6 fresh mint leaves, cct into strips or torn thin
Cocktail picks, if using
Directions:
Prepare the ingredients. Cut the watermelon, cucumber, and feta into bite-sized cubes, aiming for similar sizes so they are easy to assemble and serve. Peel the cucumber first, if desired. (I leave some of the skin on for extra color!)
Assemble the bites. Arrange the watermelon, cucumber, and feta cubes on a serving platter in an alternating pattern for a colorful presentation. For a grab-and-go appetizer, thread one cube each of watermelon, cucumber, and feta onto cocktail picks to create individual bites.

Drizzle the bites lightly with balsamic glaze, being careful not to overpower the fresh flavors!

Sprinkle the chopped mint evenly over the top for a bright, refreshing finish.

Serve and enjoy. Serve immediately for the freshest flavor and texture, or refrigerate for up to 1 hour before serving.
