Roasted Tomato & Garlic Butter is a simple recipe that transforms fresh garden tomatoes into a rich, savory spread bursting with summer flavor. Roasting the tomatoes and garlic caramelizes their natural sugars, creating a sweet, mellow flavor that blends beautifully with creamy butter and fresh herbs. Slather it on warm sourdough, melt it over grilled vegetables, spread it on sandwiches, or use it to add a burst of flavor to pasta, baked potatoes, or grilled meats. It's an easy way to make the most of an abundant tomato harvest while elevating everyday meals.

Tomatoes are an excellent source of vitamin C, potassium, and lycopene, a powerful antioxidant that becomes even more available after cooking. Yield: 8 Tbsp butter (1 stick)
Total time: 2 hours, 45 minutes

Ingredients:
1 pint cherry tomatoes
4 cloves garlic, minced
1 stick high-quality butter, softened
1 tsp olive oil
Sea salt to taste
1/2 tsp dried basil
Directions:
Preheat the oven to 400 degrees F.
Place tomatoes in a baking dish. Add in minced garlic. Sprinkle with sea salt and drizzle with olive oil.

Roast in the oven for 30-35 minutes. Remove from oven and let cool.
Remove skins of cherry tomatoes and push through a fine-mesh strainer. Discard of the juices and reserve the pulp.

In a small mixing bowl, beat the softened butter until smooth. Add in the pulp from tomatoes, basil, and pinch of salt.
Shape into a log using parchment paper or plastic wrap. Refrigerate for two hours, until set.

Enjoy with your favorite bread! I love using this spread on a toasted sourdough loaf. Store in a butter container in the refrigerator for up to 1 week.
