Jalapeno Popper Chicken Bake

If you love hummus and you love pumpkin, this one's for you! This pumpkin hummus is a fun seasonal twist on classic hummus that you can make in just a few minutes with a handful of simple ingredients. It’s creamy, savory, and perfect for fall snacking.

Pumpkin adds more than just a pretty orange color, it also brings fiber, vitamin A, and potassium to the mix. Combined with chickpeas, tahini, and olive oil, this hummus has a satisfying combination of plant-based protein, fiber, and healthy fats to help make snack time a little more filling.

Serve it with pita, naan, crackers, pretzels, or your favorite veggies for an easy appetizer or snack. And don’t overthink it; just toss everything into a food processor or blender, blend until creamy, and adjust the seasonings to your liking!

Yield: 10-12 servings

Total time: 10 minutes

Ingredients:

  • 1 (15-oz) can chickpeas, drained and rinsed

  • 1 15-oz. can pumpkin puree

  • 2 Tbsp tahini

  • 2-3 Tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin (optional)

Directions:

  1. Add all of the ingredients to a food processor or a blender and blend until smooth and creamy. If the hummus is too thick, add a bitmore olive oil and blend again. Taste and adjust the seasonings as needed/desired.

  2. Transfer the hummus to a serving bowl and top with a drizzle of olive oil or pumpkin seeds. Enjoy with crackers, pretzels, naan bread, celery sticks, or pita!
