A savory way to use pumpkin beyond the pie!
Jalapeno Popper Chicken Bake

Pumpkin season doesn’t have to mean pumpkin bread, pumpkin muffins, and pumpkin spice everything. Pumpkin can also make its way into dinner! These pumpkin and white bean burgers are an easy, savory way to use a can of pumpkin while adding some extra nutrition to a classic burger night.

Made with just a handful of simple ingredients, these burgers combine pumpkin, creamy white beans, oats, and onion to create a hearty, satisfying patty. They’re packed with fiber and plant-based protein, and you don’t need any fancy ingredients or complicated steps to make them.

Serve them on a toasted bun with your favorite toppings and a flavorful sauce (I’m partial to a maple Dijon!). Add some pickles, lettuce, tomato, or whatever you already have in the fridge. Because pumpkin season is more fun when you can actually use it in the meals you’re already making.


Yield: 6-8 burger patties

Total time: 20 minutes


Ingredients:

  • 1 15-oz can pumpkin puree

  • 1 can Great Northern White Beans, rinsed and drained

  • 1 small onion, diced

  • 1 cup oats

  • 2 Tbsp oil

  • 1 tsp garlic powder, optional

  • Salt & pepper to taste

  • Bun and additional toppings as desired


Directions:

  1. Add the pumpkin puree and drained beans to a large bowl. Use a fork or potato masher to mash the beans into the pumpkin until mostly combined. You can leave some texture; you don't want the mixture completely smooth.

  2. Stir in the diced onion, oats, garlic powder, salt, and pepper until everything is well combined.

  3. Divide the mixture into 6-8 portions and use your hands to shape each into a flat patty. If the mixture feels too wet, let it sit for 5-10 minutes to allow the oats to absorb some of the moisture.

  4. Heat the oil in a large skillet over medium heat. Carefully place the patties in the skillet and cook for 7-8 minutes per side, or until golden brown and firm enough to flip.

  5. Serve on a bun with your favorite toppings, such as lettuce, tomato, pickles, cheese, or a drizzle of sauce. Enjoy warm!

Maple Dijon Sauce

  • 2 Tbsp Dijon mustard

  • 1 Tbsp maple syrup

  • 2 Tbsp mayo

Spicy Maple Mayo

  • 2 Tbsp mayo

  • 1 Tbsp maple syrup

  • 1-2 tsp hot sauce

  • Pinch of garlic powder
