Pumpkin Spice Power Poppers (No Bake Energy Bites)

Yield: 20-24 servings

Total time: 10 minutes

Ingredients:

  • 2 cups dry, uncooked old-fashioned rolled oats

  • 1/2 cup creamy peanut butter or other nut butter*

  • 1/2 cup pumpkin puree

  • 2 Tbsp chia seeds

  • 1 Tbsp ground flaxseed

  • 1/4 cup honey

  • 1 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp pumpkin pie spice

  • 1/2 cup mini dark chocolate chips


Directions:

  1. In a large bowl, mix all ingredients together, except chocolate chips. Stir until well combined. Add in a little bit more oats if the mixture seems too sticky.

  2. Stir in chocolate chips with a spatula.

  3. Roll a small amount of the mixture into a ball in your hands. Tip: use a cookie scoop if you have one! I used a 1.5 inch cookie scoop. Bites may vary in sizes.

  4. Repeat until all of the mixture is used.

  5. Refrigerate about 1 hour, until set. Store energy bites in an air-tight container and refrigerate for up to 7 days.


*sunflower seed butter or tahini also works if you prefer it, or if you have a nut allergy!
