High-Fiber Rainbow Fruit Salad

A vibrant bowl of naturally sweet fruits packed with fiber, color, and feel-good nutrition!

As a registered dietitian, I’m always looking for simple ways to help people boost their fiber intake while adding more variety to their meals. This high-fiber rainbow fruit salad is one of my favorite solutions. By combining several colorful fruits in one bowl, you naturally get a mix of fiber, vitamins, antioxidants, and plant compounds that support overall health and digestion. Many people fall short of the recommended daily fiber intake, and fruit is an easy, delicious way to help close that gap, especially when you mix different textures and flavors together!
This salad is easy to prepare and perfect for breakfasts, lunches, and everything in between. Simply chop your favorite high-fiber fruits, toss them together, and you have a vibrant, refreshing side that pairs well with sandwiches, wraps, or grain bowls. It stores well in the fridge, making it great for meal prep, and it’s a fun way to encourage both kids and adults to enjoy a wider range of fruits. Think of it as a colorful, naturally sweet boost of fiber that makes healthy eating feel effortless!
Yield: 6 servings
Total time: 20 minutes

Ingredients:
2 c fresh mango, chopped
1 lb fresh strawberries, hulled and quartered
1 pint fresh blueberries
2 c red grapes, halved
4 kiwis, peeled and chopped
1 can mandarin oranges, drained
1/4 c honey
1 lime, zested and juiced
1 Tbsp fresh mint leaves, chopped
Directions:
In a large serving bowl, combine all fruit.
In a separate small bowl, combine honey, lime juice, and lime zest.
Toss fruit salad with dressing.
Top with chopped mint
Enjoy!
