This high-fiber tiramisu chia seed pudding brings together the cozy flavor of espresso with creamy yogurt and naturally sweet honey for a lighter take on the classic dessert.
Being Italian, tiramisu is one of those desserts that feels especially familiar to me. The traditional version layers coffee-soaked ladyfingers with a rich cream made from egg yolks, sugar, and mascarpone, all topped with cocoa powder. It originated in northeastern Italy and gained popularity in restaurants beginning in the late 1960s.
In this chia pudding breakfast version of the classic dessert, the chia seeds soak up the coffee-vanilla milk mixture overnight, creating a thick, pudding-like texture that feels indulgent but is packed with fiber and protein. Greek yogurt adds an extra layer of creaminess, giving the pudding that signature tiramisu vibe without mascarpone. A dusting of cocoa powder and a sprinkle of mini chocolate chips finish the dish with just the right amount of chocolatey richness. It’s simple to prep, perfect for making ahead, and versatile enough to enjoy as a nourishing breakfast, afternoon snack, or dessert. With just a handful of wholesome ingredients, this recipe delivers all the comforting flavors of tiramisu in an easy, everyday chia pudding.

Ingredients:
1 Tbsp + 2 tsp honey
1/2 c chia seeds
1 tsp vanilla extract, divided
3/4 c brewed coffee, cooled
3/4 c milk
3/4 c plain Greek yogurt
2 tsp cocoa powder
2 Tbsp mini semi-sweet or dark chocolate chips
Directions:
In a small bowl, add the milk, coffee, and 1/2 tsp vanilla. Mix until combined.
Next, stir in the chia seeds until well combined.

Cover and refrigerate overnight, allowing the mixture to thicken into a creamy, pudding-like consistency.

In a separate bowl, mix the Greek yogurt, ½ teaspoon vanilla, and honey until smooth.\

Assemble the pudding. Layer the chia pudding and Greek yogurt mixture in a small jar. Lightly dust with cocoa powder and sprinkle with mini chocolate chips. Repeat the layers once more and serve chilled. Enjoy!
